Why fresh may not be the best:

Due to long distances in travel, the vitamin C component may be tarnished due to poor temperature and light conditions ( combined with oxygen), and loss of vitamin C can occur

(fruit and veggies lose up to 20% of their vitamin C content if kept at room temperature)


Why frozen is good:

Once picked, they are snap-frozen, and they are more likely to keep their vitamin C content

Steaming and stewing vegetables is better than boiling them
